7-Cup Burfi


A Burfi is a great after-meal treat for people like me who like something sweet after lunch or dinner. I found this one incredibly easy to make. Taken from my mom's cookbook, all you have to do is mix all the ingredients and keep stirring till you reach the right consistency, which takes less than an hour in all!

Ingredients:

1 cup gram flour (besan)
1 cup desiccated coconut
1 cup milk
1 cup ghee
3 cups sugar

Method:

Combine all the ingredients in a non-stick pan over medium heat.

Stir the mixture continuously with a wooden ladle, until it thickens and stops sticking to the ladle and the sides of the pan. My mom calls this the ‘honeycomb texture’.

Pour into a 12x8 inch baking tray, and allow to cool for 5 minutes.

Cut into squares of the required size, and allow to cool down completely.

Once cool, separate from the baking tray and into an air-tight storage container.

Tip: Giving the coconut a quick blitz in a bender adds a little more flavour. I particularly like to add 1/4-1/2 cup of cashews while blitzing the coconut, as it makes the flavour and texture of the Burfi much richer.
