Coconut Burfi
Here's Burfi #2 from my mom's cookbook. We used to make this at home quite frequently as it was my dad's favorite. It's easy-peasy and super delicious!
Ingredients:
2 cups grated coconut
2 cups sugar
3/4 cup water
1/4 cup milk
3 tbsp ghee
1/2 tsp cardamom powder
Food coloring (optional)
Method:
Combine water, milk and sugar in a non-stick pan and bring to a boil.
Add the food coloring and the coconut.
Mix and keep stirring, till all the liquid has been absorbed.
Add the cardamom powder and mix.
Add the ghee, 1 tablespoon at a time, and continue stirring till the mixture thickens.
The Burfi is ready when the mixture stops sticking to the sides of the pan and changes to a honeycomb-like texture.
Transfer to a well-greased plate and cut into pieces.
