Zebra Cake

I was looking for something new to try out when I remembered one of my close friends baking a Zebra Cake a couple of years ago. So I decided to google up the procedure. It takes quite a bit of patience, although I definitely wouldn't call it rocket science. Here's the process, using my mom's basic butter cake recipe.

Ingredients:

For the plain stripes:

1/2 cup flour
2 eggs
1/2 cup caster sugar
1/2 cup butter
1/2 tsp baking powder
1/2 tsp vanilla essence

For the brown stripes:

1/2 cup flour - 1tbsp flour + 1 tbsp cocoa powder
2 eggs
1/2 cup caster sugar
1/2 cup butter
1/2 tsp baking powder
1/2 tsp vanilla essence

Method:

In a mixing bowl, beat the eggs with the vanilla essence until light and fluffy.

In a large mixing bowl, cream the butter and sugar. Add the beaten eggs and mix till well incorporated. Do not over mix.

Sift together the flour and baking powder (if preparing the brown batter, add the cocoa powder as well).

Add the flour mixture to the egg-butter-sugar mixture and mix till the flour has been well incorporated.

If the batter doesn't drizzle off a tablespoon, add a couple of tablespoons of milk (up to 1/4 cup for each colour batter as needed).

Grease an 8-inch diameter pan with butter and start by pouring a spoonful of the plain batter into the center of the pan. Gently tap the pan so that the batter flattens. 

Now pour a spoonful of the brown batter onto the center of the white batter. 

Repeat the process till the entire base of the pan is covered with batter (Yes, it will seem like forever, so be prepared to spend a good 15-20 minutes doing this 😛).

Preheat oven to 360 degrees F or gas mark 4. Bake for 35-45 minutes or until a wooden pick inserted comes out clean.
