Tricolored Bread Pakora
This bread pakora is a sandwich I found interesting every time my mom made it when we were young. Interesting, as it is colorful, and when we made it for my boys, they found it interesting as well (No luck getting them to try it out though! 😛). Very easily doable in under 30 minutes. Try it out on a rainy day with a cup of tea or coffee in the evening!
Ingredients:
Tomato ketchup
Mint-Coriander Chutney:
1 cup mint leaves
2 twigs curry leaves
2 tbsp roasted gram (pottu kadala) (can be replaced with grated coconut)
1 tsp tamarind pulp
2 cloves garlic
1 shallot (small onion)
1 small green chilli
1 tsp oil
Salt
Besan Batter:
1 tsp salt
1/4 tsp pepper
1/4 tsp turmeric powder
1/4 tsp coriander powder
2 pinches baking soda
1 cup water
Method:
For the chutney, add all the ingredients into a wok and sauté till the leaves have just tenderized and wilted. Do not sauté beyond this point.
Once the mixture has cooled down, transfer to a mixie or blender and blend till all the ingredients have combined into a chutney.
For the besan batter, mix all the dry ingredients in a mixing bowl. Add the water and mix to form a thick batter. Make sure it's not too runny.
Use four slices of bread to make each sandwich, with the chutney layer in between and a ketchup layer on the sides.
Dip the sandwich into the besan batter, making sure to coat all sides.
Deep-fry in oil over high flame till the besan batter is golden brown.
Cut into 1 centimeter-wide strips and serve with ketchup and a nice hot cup of tea or coffee!
