Banana Cake
Banana cake has always been a common snack in our house during the banana season. The taste and flavor vary with the variety of banana used. I also love it as it makes a healthier snack for the kids when compared to a regular cake.
Ingredients:
1 cup flour
3/4 cup caster sugar
1 tsp baking powder
1/2 tsp salt
1/2 cup oil
2-3 bananas
2 eggs
1 tsp vanilla essence
1 cup cashews

Method:
Beat the eggs with the vanilla essence till light and fluffy.
Sift together the flour, salt, caster sugar, and baking powder.
Add the oil and the beaten eggs and mix to combine well.
Mash the bananas and add to the flour mixture, along with the nuts. Mix well.
Bake at 356 degrees Fahrenheit or gas mark 4 for about half an hour, or till a wooden pick inserted comes out clean.
Allow the cake to cool completely.
Slice and serve plain or with some whipped cream.
Tip: You can substitute the eggs for about 150g of fresh cream for a vegetarian version.
Note: The more banana you add, the heavier the cake becomes.
