Rava Laddu


Rava laddus are a super-fast easy-to-make snack that can be made in under 30 minutes from ingredients that are always in your kitchen cupboard. They are my go-to when I need something sweet for an evening snack. 

Ingredients:

1 cup rava (also called semolina or suji)
1/3 cup sugar
1/2 cup ghee
1/4 cup raisins
1/4 cup cashews, chopped/broken
4 tbsp milk
1/4 tsp cardamom powder
2 tbsp grated coconut (optional)

Method:

Heat the ghee in a non-stick pan and fry the cashews and the raisins. Remove from the ghee and keep aside.

Add the rava and sauté till roasted (do not allow to brown).

Add the sugar, cardamom powder, and coconut and sauté for a minute or two.

Turn off the stove, add the fried cashews and raisins and the milk, and mix thoroughly.

Roll into balls, and allow them to cool and set.

Transfer to an airtight container. Rava Laddus can be stored for up to 5 days.

Tip: I sometimes like to add condensed milk instead of milk (I would reduce the amount of sugar added in this case), and this takes it to a whole new level!
