Banana Bread



Living in Nagercoil, you can’t help but get overwhelmed with bananas most of the year. There are times when you have two to three bunches that all ripen together and you have no way to finish them up without letting them go to waste. When I end up in this situation, the solution is simple: use up the bananas by making a wide variety of food that have bananas in them! This banana bread is one of those items, making a great snack or breakfast option.

Ingredients:

1 cup flour
1 cup wheat flour
1 cup sugar
1/2 cup brown sugar
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon powder
1 1/2 tsp salt
2 tsp vanilla
5 eggs
1 cup oil
4 cups mashed bananas
1/2 cup chopped dates (optional)

Method:

In a mixing bowl, mix all the dry ingredients till well combined.

In another mixing bowl, mix all the wet ingredients.

Combine the two and mix till well combined.

Transfer into a 10-inch baking tray and bake at 360 degrees Fahrenheit or gas mark 4 for 30-40 minutes, till a wooden pick inserted comes out clean.

Serve warm or allow to cool.

Tip: This can also be made in the microwave by cooking on the medium-high setting for 6-10 minutes, till a wooden pick inserted comes out clean.
