Watermelon Salad
The first time I tried this watermelon salad at a get-together, I was instantly in love with it. The entire combination of watermelons, olives, feta cheese and mint is very refreshing, making it a great salad to beat the heat in summer.
Ingredients:
1/2 watermelon (medium-sized)
100g Feta cheese
20 black olives
1 small onion
2 cups mint leaves
Juice of 1/2 lime
Salt and pepper to taste

Method:
Cut the watermelon and feta cheese into cubes. Alternatively, you can also crumble the feta cheese instead.
Slice the olives, finely dice the onion and chop the mint leaves.
Combine the watermelon, cheese, olives, onions and mint leaves in a large mixing bowl.
Add the lime juice, salt and pepper, and toss.
Serve chilled (This salad tastes amazing when chilled!).
Tip: You can replace the feta cheese with paneer (tofu) for a change. It tastes just as amazing.
