Chocolate Chip Banana Bread
This variation of banana bread is amazing when you want something different from the regular banana cake and banana bread. It's also a great way to use up over-ripe bananas. I adapted this recipe from Butter with a Side of Bread and instantly loved it. I will definitely be making this more often!
Ingredients:
1/4 cup oil
1/4 cup milk
2 eggs
1 cup wheat flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon powder
1/2 cup chocolate chips
Method:
Cut a few of the bananas lengthwise into four, for the top of the banana bread. Mash the rest of the bananas until smooth.
Stir in the brown sugar, oil, milk, and eggs and mix till combined.
Sift the flours, salt, cinnamon powder, and baking soda together.
Fold in three-quarters of the chocolate chips and all the oats.
Transfer to a greased 12-inch pan and sprinkle remaining chocolate chips on top.
Bake in a preheated oven at 350 degrees for about 20 minutes, until a wooden toothpick inserted comes out clean.
Cool completely before cutting and serving.
Goes well on its own, with whipped cream or drizzled with honey.
