Chocolate Potato Cake
So I was just randomly skimming through my mom's cook book when I stumbled on this recipe for a Potato Cake! Yes, a cake with potatoes in it! So naturally I had to try it out... Very simple ingredients, very simple procedure, a very soft and absolutely delicious cake! As I was having a piece, the only thought that ran through my mind was how much more amazing this cake would taste with some chocolate fudge on top. This one should be number one on anyone's experimental to-do list!
Ingredients:
1 cup plain mashed potatoes
1/2 cocoa powder
1 cup butter
2 cups powdered sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1 cup whole milk
1 cup chopped walnuts (optional)
2 pinches of salt
Method:
Cream the butter and the sugar until light and smooth.
Beat the eggs, add to the butter-cream mixture and beat again till the mixture is smooth, light and fluffy.
Add the vanilla and the mashed potatoes. Beat till well-combined.
Sieve the flour, cocoa powder, baking soda and salt together in a separate bowl.
Add a portion of the dry mixture and some of the milk to the wet mixture in batches, and mix till well-combined and all of the milk and the dry mixture have been incorporated.
Pour into a pre-greased 10-inch baking pan and sprinkle the chopped walnuts on top.
Bake at 350 degrees Fahrenheit or gas mark 4 for about 40 minutes, till a wooden pick inserted comes out clean.
Once done, remove from the oven and let it cool completely before cutting and serving.
