Homemade Mayonnaise
Mayonnaise is one of those things that can up the taste of any food, especially when used as a dip for anything fried. I, particularly, am not a fan of the store-bought ones, so was on the lookout for a good restaurant-style recipe when my husband let me in on his favorite tried and tested version. It is simple, quick and absolutely amazing. If you try making this at home just once you will definitely stop buying any from the store.
Ingredients:
1 cup oil
1 egg
1-2 cloves garlic (or 1 tsp garlic paste)
1/4 tsp lemon juice
1/4 tsp salt
A pinch of white pepper (can also use pepper)

Method:
Combine the egg, garlic, lemon juice, salt, pepper, sugar and a little of the oil and blitz in a mixie or blender till everything is combined and you get a pale and creamy paste (about 5 seconds).
Add some more of the oil and blitz again.
Continue the process, adding a little oil at a time till all the oil has been incorporated and the mixture attains the right consistency.
The mayonnaise can be stored in the fridge for up to two weeks.
Tip: You can increase the quantity of garlic to about a tablespoon for garlic mayonnaise. You can also vary the quantity of salt, pepper and sugar, or add herbs for a more herby flavor.
