Carrot Cake
If ever you need to justify eating cake as being 'healthy', bake a carrot cake! 😋 This is another recipe from my mother's cookbook that makes a great tea-time snack. I topped the cake with some fresh cream but it tastes great on its own as well.
Ingredients:
1 cup caster sugar
1 cup brown sugar
1 1/4 cup oil (I used 1 cup butter and 1/2 cup oil)
4 eggs
3 cups grated carrots
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp vanilla essence
1 1/2 cup chopped nuts (optional)
2 tsp cinnamon (optional)
Method:
Beat the eggs and vanilla.
Add the oil and beat till well-combined.
(If using butter, beat the butter till light and fluffy. Add the caster sugar and beat till well-combined. Add this butter-sugar mixture to the beaten eggs and beat till well-combined. Add this to the dry-ingredient mixture)
Mix the flour, sugars, baking powder, baking soda, salt, and cinnamon in a large mixing bowl.
Add the egg-oil mixture and mix till well combined.
Mix in the grated carrots, nuts and dates.
Pour into a pre-greased 8-inch baking pan and bake at 360 degrees or gas mark 4 for about 30-35 minutes, or till a wooden pick inserted comes out clean.
