Tiramisu Cake

Is there anyone who wouldn't love tiramisu for dessert? That combination of coffee, cocoa and cream is something no one would pass on, and that's exactly why I thought this would make a great father's day cake. Everybody LOVED it! 😁

Ingredients:

For the cake (mom's usual vanilla cake recipe):

1 cup flour
1 cup butter
1 cup caster sugar
4 eggs
1 tsp baking powder
1 tsp vanilla essence
cocoa powder (for dusting)

For the filling/frosting:

1 cup mascarpone cheese (I used a substitute using cream cheese, fresh cream, and sour cream I found on biggerbolderbaking.com)
1 cup heavy whipping cream
1/2 cup caster sugar
1/4 cup marsala wine/brandy (optional)

For the coffee syrup:

1 cup espresso
1 tbsp sugar
1 tbsp brandy (optional)

Method:

In a mixing bowl, beat the eggs with the vanilla essence until light and fluffy.

In a separate bowl, cream the butter and caster sugar. Add the butter-cream mixture to the fluffy eggs and beat until just mixed.

Sift the flour and baking powder. Fold into the egg-butter-sugar mixture until fully mixed. Do not over-mix.

Pour into an 8-inch diameter baking pan and bake at 360 degrees F or gas mark 4 for 35-45 min. A wooden pick inserted into the cake would come out clean when it is ready.

Remove the cake out of the oven and allow it to cool completely.

Beat the cream cheese, fresh cream, and sour cream till nice and creamy.

Add the caster sugar and brandy, and mix.

Add the heavy whipping cream and whip.

Prepare the coffee syrup.

Slice the cake horizontally into two halves. Sprinkle half the coffee syrup on the bottom half of the cake, evenly soaking it.

Spread the cream cheese filling over the soaked cake in an even, thick layer.

Dust a generous layer of cocoa powder over the filling, and place the top half of the cake on top of the layer of filling.

Sprinkle the remaining coffee syrup over the top half of the cake and ensure that it is evenly soaked.

Cover the sides and top of the cake with the cream cheese filling. Dust another layer of cocoa powder on top of the filling.

Pipe some more filling on top of the cake to decorate as desired.

Refrigerate for about an hour before serving.
