Banana and Cheese Cake
So it was one of those days and we had a ton of bananas that were all ripe and ready to eat - with no one to eat them. Tired of eating the bananas (and bored of baking banana cakes and banana breads), I decided to try a variation of my mom's Cheese Cake recipe to make a banana and cheese cake. Here is the recipe for you banana and cheese lovers out there who'd like to load up on both in one cake/dessert.
Ingredients:
1 cup butter
1 cup cream cheese
1 cup mashed bananas
1 tin condensed milk
1 tsp baking powder
1/2 tsp baking soda
3 eggs
Method:
Cream the cream cheese till smooth and light.
Add the eggs and beat till well combined.
Separately cream the butter till light and fluffy. Add to the egg-cheese mixture, along with the condensed milk, and beat till well combined.
Sift the flour, baking powder and baking soda together and add to the batter. Beat the mixture together till just combined.
Add the mashed bananas and mix.
Pour into an 8-inch baking pan and bake at 360 degrees Fahrenheit or gas mark 4 for about 50 minutes. A wooden pick inserted into the center will come out clean.
