Eggless Cake
We have NEVER made eggless cakes at home as we feel the flavour of eggs and butter is something that can never be compromised in a good cake. However, I did get a request for an eggless cake recipe, so I started my quest for a fail-proof recipe and after trying and failing a number of times, this one worked the best. This cake is great as a snack with tea!
Ingredients:
250ml yoghurt
150g sugar
1 tsp baking powder
1/2 tsp baking soda
100ml oil
1 tsp vanilla essence
a pinch of salt
Method:
Sieve the flour with the baking powder. Set aside.
Beat the yoghurt with the sugar using a whisk till all the sugar has dissolved and the mixture is smooth.
Add the baking soda to the sweetened yoghurt and mix. Let it sit for a couple of minutes.
Once the mixture starts to bubble, add the oil, vanilla essence and the sifted flour and whisk till well combined.
Pour into a greased baking pan and bake at 360 degrees Fahrenheit or gas mark 4 for about 35-45 minutes, till a wooden pick inserted comes out clean.
Take the cake out of the oven and allow it to cool.
