Rice Laddu
Rice Laddu is a very simple traditional sweet made from powdered rice, and for people with a sweet tooth (like me 🤩) this laddu makes a great snack. Here is a simple recipe that can easily be done in under half an hour.
Ingredients:
1 cup jaggery
1 tbsp ghee
1/4 tsp dried ginger powder
1/4 tsp cardamom powder
Method:
Fry the cashews and raisins in some ghee.
Make some jaggery syrup by dissolving the jaggery in just enough water (around 1/4 cup) and boiling it to create a thick syrup. Run the syrup through a sieve to remove any impurities.
Roast the rice well and powder it in a mixie blender. Transfer to a mixing bowl.
Add the cardamom powder, dried ginger powder, cashews, raisins, roasted coconut and the ghee and mix well.
Work with the rice mixture and the jaggery syrup in batches, pouring a little syrup onto a portion of the mixture, mixing well and rolling into balls of the desired size.
Store in an air tight container for up to a week.
