Goat/Mutton Brain Varuval (Aatu Moolai Varuval)
So this is a dish that I did not like much as a child, but as an adult, it's something I enjoy more than I would have expected. There are different ways of preparing it (different combinations of spices based on which region you're in), but this is the way my mom makes it and I think it's quite simple, yet delicious.
Ingredients:
1 1/2 cups shallots, peeled and chopped
4 green chilies (can add more, to taste)
3 twigs curry leaves
2 tsp pepper, heaped (can add more, to taste)
1 tsp cumin, heaped
1/2 tsp turmeric
salt, to taste
3 tsp oil
Method:
Add all the ingredients (except the oil) into a small pot.
Cover in water and bring to boil over high heat.
Lower the heat and allow to simmer for about 10-15min, till all the water has evaporated and the brain is cooked.
Chop up the brain into pieces using a spoon, add the oil, and sauté lightly, till the mixture sizzles.
Turn off the heat and serve hot.
Tip: You can make the same preparation using beef brain as well. One beef brain would be around the same quantity as 3 goat/mutton brains.
