Aval Urundai
I was never a fan of aval or anything made with aval when I was young, but somehow as I grew older it became an acquired taste. This simple snack is a must-try as it is very quick to make and healthy as well. Credits to mom!
Ingredients:
2 cups aval (flattened rice)
1 cup grated coconut
1 cup jaggery (can use palm jaggery as well)
1/4 tsp cardamom powder
1 cup grated coconut

Method:
Roast the aval over a medium flame.
Lightly roast the grated coconut.
Coarsely powder the aval and grated coconut in a mixie blender. Add the cardamom powder.
Dissolve the jaggery in half a cup of boiling water to form a syrup and sieve to remove any impurities.
Mix the jaggery syrup, a little at a time, into the powdered aval and roll into balls.
Store in an airtight container at room temperature for up to two days. Refrigerate if storing longer.
