Potato and Spinach Gratin
Ingredients:
A bag of spinach (two large handfuls)
1 cup full-fat milk or cream
50g grated butter
200g grated cheddar cheese
2-3 tbsp olive oil
Salt and pepper to taste
Chilli flakes or oregano seasoning or both 😉
Method:
Peel and slice the potatoes.
Toss the potato slices in olive oil with some salt and pepper (add some chili flakes or oregano seasoning, if using. I like to use the sachets we get with takeaway pizza).
Spread some butter on the base of a casserole and line with half the potato slices.
If using cream instead of milk, spread/pour about half of the cream evenly over the layer of potatoes. Skip if not using.
Chop the spinach, and spread half of the spinach on top of the potatoes.
Sprinkle half the cheese over the spinach.
Spread the rest of the potato slices in an even layer and top it with the rest of the spinach (If using cream, spread the rest half of the cream over the potatoes before topping with the spinach).
Pour the milk over the spinach and potatoes, ensuring that all sides of the casserole are covered.
Sprinkle the rest of the cheese evenly over the spinach and top off with the grated butter.
Bake at 360 degrees Fahrenheit for about 1 hour, till the potatoes are soft and the cheese on top turns golden.
