Herbed and Spiced Mashed Potatoes

 

Mashed potatoes are one of my all-time favorites, but it becomes a challenge to present this dish to a South Indian audience as the general preference is for strong flavors and a lot of spice. But when I make beef for a gathering (especially if it's baked, vs. the usual beef chukka or gravy), there is no way I am setting the dish down without a side of mashed potatoes. So I decided to make a more flavorful version. This mashed potato recipe goes very well with my Barbecue Beef Steak. Definitely worth a try!

Ingredients:

1 kg potatoes
4 tbsp butter
1/2 cup whole milk
1 tsp dried parsley
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp garlic
1/4 large onion
1/4 tsp salt for the seasoning
1/2 tsp salt for the potatoes
1/4 tsp pepper
1 green chili
a handful of finely chopped cilantro (coriander leaves)

Method:

Wash the potatoes and put them into a pressure cooker with some water. Cover and cook for about 2-3 whistles, till the potatoes are soft.

Puré together the onions, garlic, and green chili.

Put the butter into a saucepan, add the onion puré, salt, and pepper, and sauté till the puré is well-cooked.

Add the basil, oregano, and parsley, sauté lightly and turn off the heat.

Peel the potatoes and mash them. Add the milk, sautéed puré, cilantro and salt, and mix well.

Serve warm, garnished with whole cilantro leaves.
