Chocolate Banana Muffins
More bananas? Ha ha why not try these chocolate banana muffins? Okay so maybe I am going a little overboard with the bananas, but you can't blame me cuz where I live you get all kinds of bananas, all the time!
Ingredients:
1/4 cup cocoa powder
1 cup butter
1/2 cup sugar
1/2 cup palm jaggery or brown sugar (From the time I discovered the flavour of palm jaggery in place of brown sugar in my Plantain Banana Bars recipe I just couldn't stop using it in my banana recipes!!!)
4 eggs
3 ripe bananas
1 tbsp oil
1 tsp vanilla essence
1/2 tsp baking powder
1/2 tsp baking soda
Method:
In a mixing bowl, beat the eggs and the vanilla essence till light and fluffy.
In another mixing bowl, cream the butter, oil and sugars.
Add the eggs and whisk till well-combined.
Purée the bananas and add to the egg-butter-sugar mixture and whisk till well-combined.
Sift the flour, cocoa powder, baking powder, and baking soda into a mixing bowl, and add this dry-ingredient mixture to the egg-butter-banana mixture.
Whisk till just combined. Do not over-mix.
Pour into cupcake liners and bake at 360 degrees Fahrenheit or gas mark 4 for about 20 minutes, till a wooden pick inserted comes out clean.
Allow to cool and drizzle with chocolate syrup.
