Plantain Banana Bars (using Palm Jaggery)
So I again ended up with a bunch of bananas that ripened up all at the same time, and this time they were plantain bananas. So thought of switching up my Chocolate Chip Banana Bread recipe a little and using palm jaggery instead of brown sugar to make some plantain bars. Somehow, the combination of plantain + palm jaggery in banana bread is just amazing! 🤤
Ingredients:
1/4 cup sugar
1/2 cup brown sugar or jaggery
1/4 cup oil
1/2 tsp baking soda
2 eggs
1 tsp vanilla essence
pulp of 2 ripe plantains
2 ripe plantains, cut into strips
cashews and raisins
Method:
Beat the eggs and the vanilla.
Add the sugars, plantain pulp, and oil and mix till well combined.
Sift the flour and the baking soda together.
Add to the plantain pulp mixture along with half of the cashews and raisins.
Pour into a pre-greased shallow baking tin.
Sprinkle the remaining cashews and raisins on top and arrange the plantain strips.
Bake at 360 degrees Fahrenheit or Gas Mark 4 for about 30-40 minutes, until a wooden pick inserted comes out clean.
Serve warm (or hot🔥) with a scoop of vanilla ice cream. 🤤
