Creamy Mashed Potatoes

 

Who doesn't love a good serving of mashed potatoes with their beef, irrespective of the recipe or preparation? This creamy mashed potato goes amazingly well with my baked beef steak and does a good job on its own as well if you feel like bingeing on carbs!

Ingredients:

4 large potatoes (about 1 kg)
1 cup medium fat cream
salt and pepper, to taste
1-2 tbsp butter
Coriander leaves, finely chopped (optional; I just added them as I love the flavor!)

Method:

Cook the potatoes till soft. You can do this by boiling them, or by cooking them in the microwave.

If cooking them in the microwave, punch holes into the potatoes with a fork and place them in a microwave-safe container (preferably glass). Cover with a piece of kitchen roll sprinkled with water and microwave for a couple of minutes, giving it around 3 minutes/potato. Once done, if the potatoes are not soft enough, microwave for an additional 3 minutes till they are soft. Remove them from the microwave and keep them soaked in water to cool down. 

Once the cooked potatoes are warm enough to handle, peel them and transfer the peeled potatoes to a mixing bowl.

Mash them with a potato masher till there are no chunks left.

Add the cream, butter, salt, and pepper, and mash till all the ingredients have been thoroughly mixed.

Add the coriander leaves and mix.

Serve warm, garnished with coriander leaves.
