Homemade Spicy Mayonnaise

 

Mayonnaise is one of those versatile items that can be used as a dip, sauce, or filling for a number of different kinds of savory foods. An interesting variation is the spicy version, that is particularly popular among South Indians due to it's (obviously) spicy taste. Similar to my spiced and herbed mashed potatoes, this is one of those 'spicier' variations I like to put on the table when I know the people dining like their food eye-watering spicy. If you're from anywhere around where I live right now, you need to try this at home! 😉

Ingredients:

1 cup oil
1/2 cup ketchup
1 egg 
1-2 cloves garlic (or 1 tsp garlic paste)
1/4 tsp lemon juice
1/4 tsp salt
4 tsp chili powder (can add 2 tsp more if you like it super spicy)
A pinch of white pepper (can also use pepper)
A pinch of sugar

Method:

Combine the egg, garlic, lemon juice, salt, pepper, chili powder, sugar and a little of the oil and blitz in a mixie or blender till everything is combined and you get a pale and creamy paste (about 5 seconds).

Add some more of the oil and blitz again.

Continue the process, adding a little oil at a time. While adding the final portion of oil, add the ketchup as well and blitz till the mixture attains the right consistency.

Taste the mayonnaise and add more chili powder/ketchup if required, based on your taste.

The mayonnaise can be stored in the fridge for up to two weeks.
